- In a medium bowl, mix together the plain Greek yogurt, peanut butter, maple syrup, and vanilla extract using a spatula until the mixture is smooth and creamy. Aim for a consistent texture without lumps.
- Using a tablespoon, scoop out the yogurt mixture and drop it onto a lined baking sheet, spacing the bites about an inch apart.
- Place the baking sheet in the freezer and let the yogurt bites freeze for about 4 hours or until they are completely solid.
- In a microwave-safe bowl, combine the chocolate chips and avocado oil. Heat in 30-second intervals, stirring until the chocolate is fully melted and smooth.
- Once the yogurt bites are frozen solid, remove the baking sheet from the freezer. Using a fork, dip each frozen bite into the melted chocolate, allowing excess chocolate to drip off.
