Ingredients

For the Yogurt Base
  • 2 cups Plain Greek Yogurt Substitution: Use coconut yogurt or another dairy-free yogurt for a vegan option.
  • 1/2 cup Peanut Butter Substitution: Sun butter or pumpkin seed butter can be used for nut-free versions.
  • 1/4 cup Maple Syrup Substitution: Zero-calorie sweeteners like stevia or erythritol can replace maple syrup.
  • 1 teaspoon Vanilla Extract
For the Chocolate Coating
  • 1 cup Chocolate Chips Preparation Note: Melt with avocado oil for a smoother consistency.
  • 1 tablespoon Avocado Oil
  • 1/4 teaspoon Sea Salt optional

Equipment

  • Medium bowl
  • spatula
  • Baking sheet
  • parchment paper
  • microwave-safe bowl

Method

Step-by-Step Instructions
  1. In a medium bowl, mix together the plain Greek yogurt, peanut butter, maple syrup, and vanilla extract using a spatula until the mixture is smooth and creamy. Aim for a consistent texture without lumps.
  2. Using a tablespoon, scoop out the yogurt mixture and drop it onto a lined baking sheet, spacing the bites about an inch apart.
  3. Place the baking sheet in the freezer and let the yogurt bites freeze for about 4 hours or until they are completely solid.
  4. In a microwave-safe bowl, combine the chocolate chips and avocado oil. Heat in 30-second intervals, stirring until the chocolate is fully melted and smooth.
  5. Once the yogurt bites are frozen solid, remove the baking sheet from the freezer. Using a fork, dip each frozen bite into the melted chocolate, allowing excess chocolate to drip off.
  6. Return the chocolate-dipped bites to the freezer for an additional 30 minutes, allowing the chocolate to set.
  7. After the chocolate has set, serve the Frozen Chocolate Peanut Butter Greek Yogurt Bites or store them in an airtight container in the freezer.
