Step-by-Step Instructions for Healthy Baked Feta Potatoes
  1. Preheat your oven to 400°F (200°C). Rinse and dry baby potatoes, then slice them in halves or quarters.
  2. In a large baking dish, toss the prepared potatoes with cherry tomatoes, minced garlic, olive oil, dried oregano, black pepper, and salt.
  3. Nestle the block of feta cheese in the center of the vegetable mixture, drizzling a little extra olive oil over it.
  4. Bake for 35-40 minutes, stirring halfway through until the potatoes are golden and fork-tender.
