  • 1 cup Chopped Almonds Feel free to substitute with walnuts or pecans.
  • 1/2 cup Sunflower Seeds Omit for a nut-free version.
  • 1/2 cup Honey Substitute with agave nectar for a vegan option.
  • 1/4 cup Coconut Oil (melted) Any neutral oil can be used instead.

  • 1/4 tsp Salt Balances sweetness and enhances flavor.
For the Topping
  • 2 cups Mixed Berries Use any fresh or frozen fruits, like peaches or mangoes.
  • 2 tbsp Chia Seeds No substitutions here as they contribute essential texture.
  • 1/4 cup Maple Syrup Honey can be used as a great alternative.

Equipment

  • Oven
  • Mixing bowl
  • spatula
  • Baking pan
  • parchment paper
  • saucepan

Method

Base Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. In a large mixing bowl, combine rolled oats, chopped almonds, sunflower seeds, honey, melted coconut oil, vanilla extract, and salt. Stir well.
  3. Transfer the oat mixture into the prepared baking pan and press it firmly and evenly into the bottom.
  4. Bake for 15-20 minutes until the edges are golden and the center is set. Remove from the oven and let it cool slightly.
Topping Preparation
  1. In a saucepan over medium heat, combine mixed berries, chia seeds, and maple syrup. Stir gently for 5-7 minutes until the mixture thickens.
  2. Pour the berry mixture evenly over the cooled oat base and spread it gently.
Final Steps
  1. Allow the assembled bars to cool completely in the pan. Once cooled, lift them out using the parchment overhang and cut into squares or rectangles.
  2. Store the bars in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
