- Prepare shrimp by washing and patting them dry. Season with garlic powder, curry powder, black pepper, and salt. Set aside.
- In a skillet, heat olive oil and butter. Add curry powder, sauté for 1-2 minutes.
- Sauté green and red bell peppers and yellow onion for 3-4 minutes. Add minced garlic.
- Stir in fresh thyme and Scotch bonnet pepper. Add coconut milk and ketchup, season, and let bubble.
