For the Shrimp
  • 1 pound raw shrimp Fresh or frozen
  • 1 teaspoon garlic powder Savory base flavor
  • 1 tablespoon curry powder Use Betapac or Montego brands
  • 1 teaspoon salt Essential seasoning
  • 1 teaspoon black pepper Essential seasoning
For the Cooking
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 each green bell pepper Chopped
  • 1 each red bell pepper Chopped
  • 1 each yellow onion Sliced
  • 2 each escallion (green onion) Finely sliced
  • 2 cloves fresh garlic Minced or grated
  • 1 teaspoon fresh thyme
  • 1 each Scotch bonnet pepper Minced, adjust for spice tolerance
For the Sauce
  • 1 cup coconut milk Creamy base
  • 1 tablespoon ketchup Optional, for sweetness
  • 1 tablespoon cornstarch To thicken sauce, mix with cold water

Method
 

Step-by-Step Instructions
  1. Prepare shrimp by washing and patting them dry. Season with garlic powder, curry powder, black pepper, and salt. Set aside.
  2. In a skillet, heat olive oil and butter. Add curry powder, sauté for 1-2 minutes.
  3. Sauté green and red bell peppers and yellow onion for 3-4 minutes. Add minced garlic.
  4. Stir in fresh thyme and Scotch bonnet pepper. Add coconut milk and ketchup, season, and let bubble.
  5. Add shrimp, cooking for 2-3 minutes on each side until pink. Do not overcook.
  6. If desired, mix cornstarch with water, stir into sauce, and simmer for an additional 1-2 minutes.
  7. Remove from heat, adjust seasonings, and serve immediately with sides.
