- Preheat your oven to 375°F (190°C) and coat an 8" x 8" baking dish with non-stick spray.
- Drain half of the shredded zucchini using cheesecloth, then transfer to a large mixing bowl.
- Combine drained zucchini with diced onion, minced garlic, and beaten eggs. Mix in the cheeses thoroughly.
- Transfer mixture into the prepared baking dish and bake for 20 minutes until edges bubble and top sets.
- Melt butter in a saucepan, mix with crushed pork rinds and remaining Parmesan for the topping.
- After 20 minutes, sprinkle topping on casserole and bake for an additional 5-8 minutes until golden brown.
- Remove from oven, season with salt and pepper, and serve hot.
