  • 1 cup shredded mozzarella cheese Substitute with any melting cheese.
  • 1/2 cup shredded cheddar cheese Can replace with more mozzarella.
  • 3/4 cup grated Parmesan cheese (divided) Reduces for less cheese.
  • 1/2 cup crushed pork rinds or Parmesan cheese crisps Use crisps for vegetarian option.
  • 3 tbsp butter Can swap with olive oil.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and coat an 8" x 8" baking dish with non-stick spray.
  2. Drain half of the shredded zucchini using cheesecloth, then transfer to a large mixing bowl.
  3. Combine drained zucchini with diced onion, minced garlic, and beaten eggs. Mix in the cheeses thoroughly.
  4. Transfer mixture into the prepared baking dish and bake for 20 minutes until edges bubble and top sets.
  5. Melt butter in a saucepan, mix with crushed pork rinds and remaining Parmesan for the topping.
  6. After 20 minutes, sprinkle topping on casserole and bake for an additional 5-8 minutes until golden brown.
  7. Remove from oven, season with salt and pepper, and serve hot.
