Step-by-Step Instructions
  1. Combine chopped dried apricots with enough water to cover them in a saucepan. Simmer for about 10-15 minutes until thick.
  2. Beat cream cheese and butter in a stand mixer until creamy. Gradually add flour.
  3. Roll dough into walnut-sized balls and press into a greased mini muffin pan.
  4. Spoon cooled apricot filling into each tart shell and bake at 400°F for 10-12 minutes.
  5. Cool tarts for 5-10 minutes in the pan before transferring to a rack to cool completely.
