  • 16 oz Cottage Cheese You can also use ricotta for a different flavor.
  • 1 package Orange Jell-O Consider lime Jell-O for a zesty twist.
For the Fruit
  • 1 can Mandarin Oranges Drain well before adding.
  • 1 can Crushed Pineapple Drain before use to keep it from getting soggy.
For the Whip
  • 8 oz Cool Whip Alternatively, use heavy cream.
Optional Crunch
  • ½ cup Chopped Pecans or Walnuts Feel free to omit or replace with chopped almonds.

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, add 16 oz of cottage cheese and pour in 1 package of orange Jell-O. Use a spatula to mix until fully blended, creating a smooth and creamy base. This should take about 1-2 minutes.
  2. Next, incorporate 1 can of drained mandarin oranges and 1 can of drained crushed pineapple into the mixture. Gently fold the fruit into the creamy base using a spatula until evenly distributed. This should take another minute or so.
  3. Open an 8 oz container of Cool Whip and gently fold it into the fruit mixture. Combine until everything is well incorporated, taking care not to deflate the whipped cream. This should only take about 2 minutes.
  4. If desired, mix in ½ cup of chopped pecans or walnuts at this stage. Fold them gently to ensure they’re well distributed.
  5. Carefully transfer the mixture into a serving bowl or an 8x8-inch or 9x9-inch dish. Spread it evenly, creating a smooth top for presentation. This should take about 2-3 minutes.
  6. Cover the dish with plastic wrap or a lid and refrigerate for at least 2 hours, preferably overnight, to help it set properly.
  7. Once chilled, serve it straight from the bowl or slice it into squares if set in a dish.
