  • 3 tablespoons Olive Oil Use high-quality extra virgin for best flavor.
  • 1 tablespoon Lemon Juice Freshly squeezed is best for vibrant taste.
  • 1 clove Garlic Adjust amount based on preference.
Bread
  • 1 loaf Ciabatta Can replace with sourdough or baguette.
  • to taste Black Pepper Freshly cracked is preferred.

Method
 

Preparation
  1. In a food processor, combine the thawed frozen peas, optional pea shoots, grated Parmesan, olive oil, lemon juice, and minced garlic. Pulse into a rough paste and set aside.
  2. Preheat your broiler to high. Slice the ciabatta into thick pieces and drizzle with olive oil. Broil for 2-3 minutes on each side until golden brown.
  3. Rub half a clove of garlic over one side of each ciabatta slice to infuse flavor.
  4. Spread the pea topping generously on each slice of bread. Optionally, sprinkle more grated Parmesan and zest lemon peel on top.
  5. Drizzle with extra virgin olive oil and crack fresh black pepper over the top. Serve immediately.
