  1. Season the chicken thighs with onion powder, garlic powder, paprika, thyme, salt, and pepper. Let sit for 15 minutes.
  2. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken skin-side down for 5-7 minutes until golden brown, then flip and cook the other side for 5 minutes.
  3. Remove chicken and add sliced onion and apples to the skillet. Sauté for 3-4 minutes until onions are translucent.
  4. Remove apples and onions, melt butter in the skillet, and add apple cider, broth/wine, mustard, and garlic. Simmer for 3-5 minutes until thickened.
