- Slice the halloumi cheese into even, ½-inch thick pieces. Heat a non-stick skillet and add olive oil. Fry halloumi slices for 2–3 minutes on each side until golden. Remove from skillet.
- Prepare fresh vegetables: thinly slice red bell pepper and red onion, julienne cucumber, and tear lettuce into bite-sized pieces. Set aside.
- Take a tortilla wrap and spread sweet chili sauce over it. Layer with crispy halloumi slices and fresh vegetables. Add optional toppings if desired.
- Fold the bottom edge of the tortilla over the filling and roll upwards, tucking in the sides. Toast in the skillet for 1-2 minutes for warmth.
- Serve immediately with extra sweet chili sauce on the side.
