  1. Begin by cutting boneless chicken breasts into bite-sized pieces. Season the chicken generously with salt and pepper, then set aside.
  2. Heat a tablespoon of oil in a large skillet over medium-high heat. Add the seasoned chicken pieces in a single layer and cook for 5 to 7 minutes until golden brown.
  3. In the same skillet, lower the heat to medium and add minced garlic, stirring for about 30 seconds. Pour in soy sauce, peanut butter, and coconut milk, whisking until smooth.
  4. Return the cooked chicken to the skillet, stirring to coat in the sauce. Simmer for an additional 2 to 3 minutes.
  5. Serve warm over jasmine rice or quinoa, garnished with chopped peanuts and fresh cilantro.
