Step-by-Step Instructions
  1. Begin by washing your zucchini and cutting off the ends. Grate the zucchini using a box grater, then place it in a colander. Sprinkle with salt and let it drain for 15 to 30 minutes.
  2. In a large mixing bowl, crack in the eggs and beat them lightly. Add the chopped green onions, fresh mint, crumbled feta cheese, and a dash of black pepper. Stir until combined.
  3. Gradually add self-rising flour to the zucchini mixture, stirring gently until the dough reaches a soft, sticky consistency. Allow the batter to rest briefly while preheating the oil.
  4. Heat olive oil in a deep fryer to 375°F (190°C). Once hot, drop spoonfuls of the zucchini mixture into the oil and fry for about 2 to 3 minutes per side until golden brown.
  5. Using a slotted spoon, carefully remove the Greek Zucchini Balls from the oil and place them on a plate lined with paper towels. Serve warm with tzatziki sauce.
