  • 1 cup Granulated Sugar Can reduce for less sweetness
  • 1 cup Dark Brown Sugar Or light brown as a substitute
  • 3 Eggs Room temperature
  • 2 cups All-Purpose Flour Measure properly for best results
  • 1/4 cup Cornstarch Omit if needed
  • 1 teaspoon Cardamom
  • 1 teaspoon Cinnamon
  • 1 teaspoon Ginger
  • 1/2 teaspoon Allspice
  • 1/2 teaspoon Nutmeg
  • 1/4 teaspoon Black Pepper
  • 2 teaspoons Baking Powder Ensure freshness
  • 1 teaspoon Baking Soda Ensure freshness
  • 1/2 teaspoon Salt
  • 1 cup Sour Cream Can substitute with Greek yogurt
  • 1/2 cup Vegetable Oil Can also use canola or sunflower oil
  • 2 teaspoons Vanilla Extract Opt for pure extract
For the Frosting
  • 3 cups Powdered Sugar Sift for smooth consistency
  • 8 ounces Full-Fat Cream Cheese Drain excess moisture if watery
  • 1 tablespoon Vanilla Bean Paste Or use additional vanilla extract

Method
 

Steps to Make Chai Cake
  1. Preheat your oven to 170ºC (340ºF) and prepare two 20 cm (8-inch) round cake pans with parchment and grease.
  2. Sift together flour, cornstarch, baking powder, baking soda, salt, and spices. Set this aside.
  3. Cream butter with granulated and brown sugars until light and fluffy, about 3-4 minutes.
  4. Incorporate eggs one at a time, mixing until smooth.
  5. Alternate adding dry ingredients with sour cream and oil, mixing until just combined.
  6. Pour batter into prepared pans and bake for 28-30 minutes or until a toothpick comes out clean.
  7. Cool cakes in pans for 10 minutes, then turn out onto wire racks to cool completely.
  8. Prepare frosting by beating cream cheese and butter until smooth, then mix in powdered sugar and vanilla bean paste.
  9. Once cakes are cool, assemble by frosting between layers and on top and sides.
