Steps to Make Chai Cake
- Preheat your oven to 170ºC (340ºF) and prepare two 20 cm (8-inch) round cake pans with parchment and grease.
- Sift together flour, cornstarch, baking powder, baking soda, salt, and spices. Set this aside.
- Cream butter with granulated and brown sugars until light and fluffy, about 3-4 minutes.
- Incorporate eggs one at a time, mixing until smooth.
- Alternate adding dry ingredients with sour cream and oil, mixing until just combined.
- Pour batter into prepared pans and bake for 28-30 minutes or until a toothpick comes out clean.
- Cool cakes in pans for 10 minutes, then turn out onto wire racks to cool completely.
- Prepare frosting by beating cream cheese and butter until smooth, then mix in powdered sugar and vanilla bean paste.
- Once cakes are cool, assemble by frosting between layers and on top and sides.
