  • 1 cup Key Lime Juice Bottled or fresh juice.
  • 0.75 cup White Sugar Adjust to taste if needed.
  • 1 tbsp Cornstarch No substitute needed.
  • 2 tbsp Butter Rich flavor.
For the Topping
  • 8 oz Whipped Topping Fresh whipped cream can be used as a substitute.
  • 1 tbsp Lime Zest Optional but adds flavor.
  • Green Food Coloring For color, optional.
  • Extra Lime Zest For garnish.

Method
 

Preparation Steps
  1. Preheat oven to 350°F (175°C). Combine cake mix, water, oil, and eggs in a bowl. Beat for 2 minutes, pour into greased pan, and bake for 25 to 30 minutes.
  2. Once the cake has cooled, poke holes in the top about 1-inch apart.
  3. In a saucepan, combine gelatin, key lime juice, sugar, and cornstarch. Stir over medium heat until simmering and slightly thickened. Add butter and stir until melted. Pour over the poked cake.
  4. Cover the cake and refrigerate for at least 2 to 4 hours.
  5. Spread whipped topping over the top and sprinkle lime zest if desired.
  6. Slice into squares and serve chilled.
