Preparation Steps
- Preheat oven to 350°F (175°C). Combine cake mix, water, oil, and eggs in a bowl. Beat for 2 minutes, pour into greased pan, and bake for 25 to 30 minutes.
- Once the cake has cooled, poke holes in the top about 1-inch apart.
- In a saucepan, combine gelatin, key lime juice, sugar, and cornstarch. Stir over medium heat until simmering and slightly thickened. Add butter and stir until melted. Pour over the poked cake.
- Cover the cake and refrigerate for at least 2 to 4 hours.
- Spread whipped topping over the top and sprinkle lime zest if desired.
- Slice into squares and serve chilled.
