Method
 

Preparation
  1. Prepare the springform pan by lining the bottom and sides with parchment paper.
  2. Blend together evaporated milk, sweetened condensed milk, and lime juice until smooth.
  3. Spoon a thin layer of the lime mixture into the bottom of the prepared pan to create the base.
  4. Lay the Maria cookies over the lime mixture, breaking them to fit snugly.
  5. Repeat layering by adding more lime filling and cookies, finishing with a lime mixture layer on top.
  6. Cover the cake with plastic wrap and chill in the refrigerator for at least 4 hours.
  7. Whip cold heavy cream with sugar and vanilla extract until stiff peaks form.
  8. Remove the cake from the pan, top with whipped cream, and garnish with lime zest or slices.
