For the Zucchini
  • 2 medium Zucchini Yellow squash makes a great substitute.
  • 1/2 cup Sunflower Oil Canola or vegetable oil can also be used.
  • 1 tbsp Olive Oil Avocado oil is a good alternative if needed.
  • 1/2 cup Fresh Basil Leaves Feel free to use any fresh herbs like parsley instead.

Method
 

Step-by-Step Instructions
  1. Begin by heating sunflower oil in a heavy-bottom pot to 350°F.
  2. Slice your zucchini into thin rounds. Fry them for about 5-7 minutes until golden.
  3. In a large pot, bring salted water to a boil and cook the pasta according to package instructions.
  4. In a large frying pan, heat olive oil, add cooled fried zucchini and reserved pasta water.
  5. Drain pasta and add to the frying pan with zucchini sauce. Toss gently.
  6. Off heat, stir in Parmesan cheese and butter to create a creamy sauce.
  7. Plate and garnish with fresh basil leaves before serving.
