Preparation
- Preheat the oven to 350°F (175°C). Grease an 8-inch loaf pan and line the bottom with parchment paper.
- In a medium bowl, combine 1 cup of milk with 1 tablespoon of white vinegar and let sit for 15 minutes.
- Whisk in 1 cup of light brown sugar, 1/3 cup of vegetable oil, and 1 teaspoon of vanilla extract until smooth.
- Stir in 1 teaspoon of instant coffee (if using) and 1/2 cup of cocoa powder until no lumps remain.
- Sift in 1 1/2 cups of flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt, folding gently.
- Gradually mix in 1 cup of warm water until the batter is smooth.
- Pour the batter into the prepared loaf pan and smooth the top. Tap gently to release air bubbles.
- Bake for 45-50 minutes, checking doneness with a toothpick.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack.
- For the ganache, melt 6 ounces of chocolate with 1/2 cup of heavy cream, stirring until smooth.
- Pour the ganache over the cooled loaf, let it set, then slice and serve.
