Ingredients
  

For the Batter
  • 1 cup milk can substitute with almond, soy, or oat milk
  • 1 tablespoon white vinegar can substitute with lemon juice
  • 1 cup light brown sugar can substitute with granulated sugar
  • 1/3 cup vegetable oil can use sunflower or coconut oil
  • 1 teaspoon vanilla extract preferably pure extract
  • 1 teaspoon instant coffee granules optional
  • 1/2 cup natural cocoa powder can substitute with Dutch processed cocoa
  • 1 1/2 cups all-purpose flour can use gluten-free baking blend
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup warm water can use hot brewed coffee
  • 1 cup chocolate chips optional
For the Ganache
  • 6 ounces chocolate dark chocolate preferred
  • 1/2 cup cream heavy cream

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease an 8-inch loaf pan and line the bottom with parchment paper.
  2. In a medium bowl, combine 1 cup of milk with 1 tablespoon of white vinegar and let sit for 15 minutes.
  3. Whisk in 1 cup of light brown sugar, 1/3 cup of vegetable oil, and 1 teaspoon of vanilla extract until smooth.
  4. Stir in 1 teaspoon of instant coffee (if using) and 1/2 cup of cocoa powder until no lumps remain.
  5. Sift in 1 1/2 cups of flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt, folding gently.
  6. Gradually mix in 1 cup of warm water until the batter is smooth.
  7. Pour the batter into the prepared loaf pan and smooth the top. Tap gently to release air bubbles.
  8. Bake for 45-50 minutes, checking doneness with a toothpick.
  9. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack.
  10. For the ganache, melt 6 ounces of chocolate with 1/2 cup of heavy cream, stirring until smooth.
  11. Pour the ganache over the cooled loaf, let it set, then slice and serve.
