Preparation
- Preheat your oven to 450°F (230°C).
- Brush both sides of the corn tortillas lightly with canola oil and arrange them on a baking sheet.
- Bake the corn tortillas for about 10 minutes, flipping halfway through.
- In a medium saucepan, combine shredded rotisserie chicken, salsa, taco seasoning, black beans, and corn over medium heat for about 5 minutes.
- Top each crispy tortilla with 1/2 cup of the chicken mixture and 1/4 cup of cheese.
- Return the topped tostadas to the oven for an additional 5 minutes.
- Remove from the oven and garnish with fresh cilantro and diced tomatoes.
- Serve immediately and allow everyone to customize with their favorite toppings.
