Ingredients

  • 8 pieces Corn Tortillas Fresh ones work best for crispiness.
  • 2 cups Rotisserie Chicken Shredded.
  • 1 cup Salsa Customize the heat level according to your taste.
  • 1 tablespoon Taco Seasoning Feel free to create your own spice mix.
For the Fillings
  • 1 can Canned Black Beans Rinse and drain.
  • 1 can Canned Corn Fresh corn can be used for a seasonal boost.
  • 1 cup Cheese (Cheddar or Monterey Jack) Dairy-free cheese can be used if needed.
  • 1/4 cup Fresh Cilantro Substitute with green onions if preferred.
  • 1 cup Diced Tomatoes Pico de gallo can give an extra flavor kick.

Method
 

Preparation
  1. Preheat your oven to 450°F (230°C).
  2. Brush both sides of the corn tortillas lightly with canola oil and arrange them on a baking sheet.
  3. Bake the corn tortillas for about 10 minutes, flipping halfway through.
  4. In a medium saucepan, combine shredded rotisserie chicken, salsa, taco seasoning, black beans, and corn over medium heat for about 5 minutes.
  5. Top each crispy tortilla with 1/2 cup of the chicken mixture and 1/4 cup of cheese.
  6. Return the topped tostadas to the oven for an additional 5 minutes.
  7. Remove from the oven and garnish with fresh cilantro and diced tomatoes.
  8. Serve immediately and allow everyone to customize with their favorite toppings.
