Ingredients
  

For the Dough
  • 3 cups All-Purpose Flour or bread flour for a chewier texture
  • 1 cup Bread Flour improves dough's strength
  • 2 teaspoons Active Dry Yeast ensure it's fresh
  • 2 tablespoons Granulated Sugar can replace with honey or agave
  • 1 teaspoon Salt kosher or sea salt recommended
  • 1 cup Milk substitute with almond or soy milk if needed
  • 2 tablespoons Milk Powder can be omitted
  • 2 large Eggs or flax eggs for a vegan option
  • 1/2 cup Butter unsalted recommended
For the Flavor
  • 2 heads Garlic roasted enhances sweetness
  • 1 cup Mozzarella Cheese or cheddar, gouda, parmesan for different flavors
  • 1/4 cup Parsley can substitute with chives or green onions

Method
 

Preparing the Rolls
  1. Preheat your oven to 175°C (350°F).
  2. Wrap whole heads of garlic in aluminum foil and roast for about 2 hours until soft.
  3. Squeeze the roasted garlic into a bowl, combine with softened butter and parsley. Blend until smooth.
  4. In a separate bowl, mix warm milk, yeast, and sugar. Let sit for 10 minutes until foamy.
  5. Combine flours, salt, garlic butter, and egg yolks in a large bowl. Add the yeast mixture and mix until shaggy dough forms.
  6. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  7. Place the kneaded dough in a greased bowl, cover, and let rise in a warm place for about 1.5 hours.
  8. After rising, punch down the dough and roll it out to 1/4 cm thickness, spreading garlic butter and mozzarella on top.
  9. Roll the dough tightly into a log, cut into 6 equal pieces, and place on a greased baking sheet to proof for 30 minutes.
  10. Bake for 20-25 minutes until golden brown and cheese is bubbly. Brush with leftover garlic butter and garnish with parsley.
