Method
 

Instructions for Homemade Soda
  1. In a medium saucepan, combine 4 cups of water with 2 teaspoons of cinnamon chunks, ½ teaspoon of ground nutmeg, ½ teaspoon of cloves, ½ teaspoon of ground cardamom, 1 whole star anise, 1 tablespoon of dried ginger root, and 1 tablespoon of black peppercorns. Bring the mixture to a gentle simmer over medium-low heat, covering the pot for about 20 minutes until the aroma fills your kitchen.
  2. After the 20 minutes, carefully strain the syrup through a fine mesh sieve into a large bowl or pitcher to remove the solid spices. Use the back of a spoon to press down on the solids, extracting all the delightful juice from the cherries (if using dried cherries).
  3. While the syrup is still warm, stir in ¾ cup of coconut sugar until completely dissolved.
  4. Once the sugar has dissolved, mix in 1 teaspoon of vanilla extract, ¾ teaspoon of almond extract, 1 tablespoon of orange juice, and 1 tablespoon of lemon juice. Stir well to ensure all flavors are fully integrated.
  5. Transfer the syrup into a clean jar or bottle and allow it to cool completely before sealing it. This syrup can be stored in the refrigerator for up to two weeks.
  6. To enjoy your homemade Dr Pepper, combine ¼ cup of your prepared syrup with approximately 8 ounces (1 cup) of seltzer water in a glass. Stir gently to combine.
