  • 2 Ripe Mangoes peeled and diced
  • 2 cups Green Cabbage shredded
  • 1 Carrot grated
  • 1 Red Bell Pepper sliced
  • 0.5 Red Onion sliced
  • 0.25 cups Fresh Cilantro
For the Dressing
  • 1 Lime Juice freshly squeezed
  • 1 tablespoon Honey or Maple Syrup
  • 2 tablespoons Sesame Oil
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Wash and prepare your vegetables. In a large mixing bowl, combine two peeled and diced ripe mangoes, about two cups of shredded green cabbage, one grated carrot, one sliced red bell pepper, and half a sliced red onion.
  2. In a separate small bowl, whisk together the juice of one lime, one tablespoon of honey (or maple syrup), and two tablespoons of sesame oil. Add a pinch of salt and pepper to taste.
  3. Pour the dressing over the mango and vegetable mixture and toss gently to coat everything evenly.
  4. Allow your Mango Slaw to sit for about 5-10 minutes at room temperature to let the flavors meld.
  5. Taste the Mango Slaw to adjust seasoning if necessary and serve chilled or at room temperature.
