  1. Soak the fresh pineapple rings in dark and coconut rum for at least 30 minutes.
  2. Prepare the dredging batter by whisking together all-purpose flour, eggs, and coconut milk until smooth.
  3. Coat each soaked pineapple ring in the batter, then roll them in sweetened coconut.
  4. Heat vegetable oil in a deep frying pan to about 350°F (175°C).
