  • 4 cups Green Cabbage chopped, can substitute with coleslaw mix
  • 2 cups Diced Tomatoes fresh or canned
  • 1 can Black Beans drained and rinsed
  • 1 cup Sweet Corn canned or frozen
For Assembly
  • 1 bag Fritos Corn Chips chili cheese Fritos can enhance flavor
  • 1 cup Shredded Cheddar Cheese dairy-free alternative if needed
  • 1/2 cup Ranch Dressing or Southwest Dressing or vinaigrette for a lighter version

Method
 

Step-by-Step Instructions for Frito Cowboy Cabbage
  1. Brown the beef in a large skillet over medium heat for 6-8 minutes. Break it up while it cooks and drain excess fat.
  2. Add taco seasoning and 2-3 tablespoons of water, simmer for 2-3 minutes until combined and fragrant.
  3. Chop cabbage into bite-sized pieces and dice the tomatoes, drain and rinse beans and corn. This should take 5-7 minutes.
  4. In a large bowl, layer cabbage, beef mixture, black beans, corn, and tomatoes. Toss to mix well.
  5. Sprinkle Fritos corn chips and shredded cheddar cheese on top.
  6. Drizzle with ranch dressing or Southwest dressing before serving.
