- Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
- In a medium saucepan, combine heavy cream with cornstarch over medium-low heat. Whisk until warm and slightly thickened. Add butter, garlic, thyme, salt, and pepper. Stir until butter melts.
- Wash and peel the sweet potatoes, then slice them thinly (about 1/8-inch thick). Layer them in the baking dish.
- Pour the garlic butter sauce over the sweet potato layers using a spatula to coat evenly.
- Cover with aluminum foil and bake for about 30 minutes.
- After 30 minutes, remove foil and sprinkle Parmesan cheese on top. Bake for an additional 10 minutes, or broil for 1-2 minutes until cheese is golden and bubbly.
- Let the bake rest for about 10 minutes before serving.
