Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  2. In a medium saucepan, combine heavy cream with cornstarch over medium-low heat. Whisk until warm and slightly thickened. Add butter, garlic, thyme, salt, and pepper. Stir until butter melts.
  3. Wash and peel the sweet potatoes, then slice them thinly (about 1/8-inch thick). Layer them in the baking dish.
  4. Pour the garlic butter sauce over the sweet potato layers using a spatula to coat evenly.
  5. Cover with aluminum foil and bake for about 30 minutes.
  6. After 30 minutes, remove foil and sprinkle Parmesan cheese on top. Bake for an additional 10 minutes, or broil for 1-2 minutes until cheese is golden and bubbly.
  7. Let the bake rest for about 10 minutes before serving.
