- Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the ground chicken, grated Parmesan cheese, breadcrumbs, fresh parsley, minced garlic, beaten egg, dried oregano, fine sea salt, and freshly ground black pepper.
- Pour in the whole milk and mix again until the mixture adheres together cohesively.
- Divide the mixture into four equal portions and shape each into compact mini loaves.
- Drizzle extra virgin olive oil over each meatloaf and optionally sprinkle grated mozzarella cheese on top.
- Bake in the preheated oven for 25–30 minutes until golden-brown and the internal temperature reaches 74°C (165°F).
- Let them rest for about 5 minutes before serving.
