Method
 

Step-by-Step Instructions
  1. Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground chicken, grated Parmesan cheese, breadcrumbs, fresh parsley, minced garlic, beaten egg, dried oregano, fine sea salt, and freshly ground black pepper.
  3. Pour in the whole milk and mix again until the mixture adheres together cohesively.
  4. Divide the mixture into four equal portions and shape each into compact mini loaves.
  5. Drizzle extra virgin olive oil over each meatloaf and optionally sprinkle grated mozzarella cheese on top.
  6. Bake in the preheated oven for 25–30 minutes until golden-brown and the internal temperature reaches 74°C (165°F).
  7. Let them rest for about 5 minutes before serving.
