Preparation Steps

  2. Peel the sweet potatoes and slice them into thin rounds, about ¼ inch thick.
  3. In a large resealable bag, combine sweet potato slices with minced garlic, olive oil, melted butter, salt, pepper, parmesan cheese, and Italian seasoning. Seal and shake until coated.
  4. Lightly butter a baking dish and arrange sweet potato slices in a single layer, ensuring even spacing.
  5. Sprinkle with fresh thyme and additional parmesan cheese if desired.
  6. Place the baking dish in the oven and roast for 30 to 35 minutes, flipping halfway for even cooking.
  7. Remove from the oven, allow to cool slightly, and serve warm, garnished with fresh thyme.
