- Preheat your oven to 400°F (200°C).
- Peel the sweet potatoes and slice them into thin rounds, about ¼ inch thick.
- In a large resealable bag, combine sweet potato slices with minced garlic, olive oil, melted butter, salt, pepper, parmesan cheese, and Italian seasoning. Seal and shake until coated.
- Lightly butter a baking dish and arrange sweet potato slices in a single layer, ensuring even spacing.
- Sprinkle with fresh thyme and additional parmesan cheese if desired.
- Place the baking dish in the oven and roast for 30 to 35 minutes, flipping halfway for even cooking.
- Remove from the oven, allow to cool slightly, and serve warm, garnished with fresh thyme.
