  • 1/2 cup Grated Parmesan Cheese Nutritional yeast is a dairy-free alternative.

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Cut a thin lengthwise slice off the bottom of the zucchini, then slice crosswise into thin segments.
  3. Place the zucchini in a baking dish and pour melted butter over them.
  4. Combine Parmesan cheese, minced garlic, black pepper, paprika, salt, and Italian seasoning in a bowl.
  5. Rub the seasoning mixture over the zucchini, ensuring even coating.
  6. Bake for 25-30 minutes until golden and tender.
  7. Garnish with chopped parsley before serving.
