Preparation Steps
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine diced Yukon Gold potatoes and trimmed asparagus. Add minced garlic, a drizzle of olive oil, dried oregano, salt, and black pepper. Toss until coated.
- Spread the coated vegetables in a single layer on a large baking sheet. Use parchment paper for easier cleanup.
- Place the baking sheet in the preheated oven and roast for 20-25 minutes. Check halfway through and flip the vegetables.
- Once roasted, remove from the oven and drizzle with lemon juice. Garnish with freshly chopped parsley before serving warm.
