  • 1 pound Boneless, Skinless Chicken Breast Alternatively, use chicken thighs or tofu.
  • 4 cups Chicken Broth Low-sodium or vegetable broth can be used.
  • 2 cups Water Adjust based on desired soup thickness.
For the Aromatics
  • 1 tablespoon Fresh Ginger Freshly grated is best.
  • 4 cloves Garlic Cloves Increase for garlic lovers.
  • 1 medium Onion Any onion type works.
For the Vegetables
  • 2 medium Carrots Can substitute with parsnips.
  • 1 medium Bell Pepper Any color is fine.
  • 2 cups Bok Choy or Spinach Kale is a solid substitute.
For the Noodles
  • 8 ounces Egg Noodles or Rice Noodles Rice noodles are gluten-free.
To Finish
  • 2 tablespoons Green Onions Chives can be an alternative.
  • Salt and Pepper Adjust to taste.

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of vegetable oil in a large pot over medium heat.
  2. Add 1 pound of sliced boneless, skinless chicken breast, season with salt and pepper, sauté for 5-7 minutes.
  3. Incorporate 1 chopped onion, 4 minced garlic cloves, and 1 tablespoon of freshly grated ginger, cook for 2-3 minutes.
  4. Pour in 4 cups of chicken broth and 2 cups of water, stir and bring to a rolling boil.
  5. Stir in 2 chopped carrots and 1 diced bell pepper, cook for 5 minutes.
  6. Add 8 ounces of egg noodles or rice noodles, cook according to package instructions.
  7. For the last 2 minutes, add 2 cups of chopped bok choy or spinach and gently stir.
  8. Taste and adjust seasoning with additional salt and pepper if needed.
  9. Ladle into bowls and garnish with sliced green onions, serve hot.
