- Heat 2 tablespoons of vegetable oil in a large pot over medium heat.
- Add 1 pound of sliced boneless, skinless chicken breast, season with salt and pepper, sauté for 5-7 minutes.
- Incorporate 1 chopped onion, 4 minced garlic cloves, and 1 tablespoon of freshly grated ginger, cook for 2-3 minutes.
- Pour in 4 cups of chicken broth and 2 cups of water, stir and bring to a rolling boil.
- Stir in 2 chopped carrots and 1 diced bell pepper, cook for 5 minutes.
- Add 8 ounces of egg noodles or rice noodles, cook according to package instructions.
- For the last 2 minutes, add 2 cups of chopped bok choy or spinach and gently stir.
- Taste and adjust seasoning with additional salt and pepper if needed.
- Ladle into bowls and garnish with sliced green onions, serve hot.
