Method
 

Step-by-Step Instructions
  1. Begin by melting 3 tablespoons of butter in a small saucepan over medium-low heat. Stir in ⅛ teaspoon of red pepper flakes and let the mixture infuse for approximately 5 minutes.
  2. While the butter is infusing, take your thick, good-quality white bread and lay it out on a clean surface. Brush one side of each slice liberally with the infused butter.
  3. Heat a non-stick frying pan over medium heat, place one slice of the buttered-side down into the pan, layer the goat cheese and white cheddar cheese, drizzle honey, and cover with another buttered slice.
  4. Cover the pan with a lid and allow the sandwich to cook for about 5-7 minutes. Check periodically until the bread is nicely golden brown and the cheese is oozing.
  5. Once cooked, remove the sandwich from the pan, drizzle the remaining honey on top, and sprinkle with extra red pepper flakes. Slice in half and enjoy!
