- Begin by melting 3 tablespoons of butter in a small saucepan over medium-low heat. Stir in ⅛ teaspoon of red pepper flakes and let the mixture infuse for approximately 5 minutes.
- While the butter is infusing, take your thick, good-quality white bread and lay it out on a clean surface. Brush one side of each slice liberally with the infused butter.
- Heat a non-stick frying pan over medium heat, place one slice of the buttered-side down into the pan, layer the goat cheese and white cheddar cheese, drizzle honey, and cover with another buttered slice.
- Cover the pan with a lid and allow the sandwich to cook for about 5-7 minutes. Check periodically until the bread is nicely golden brown and the cheese is oozing.
- Once cooked, remove the sandwich from the pan, drizzle the remaining honey on top, and sprinkle with extra red pepper flakes. Slice in half and enjoy!
