For the Bowls
  • 1 cup Cooked quinoa or rice Cauliflower rice can substitute.
  • 1 cup Cherry tomatoes, halved Any small tomato variety can work.
  • 1 piece Cucumber, diced Can be substituted with bell peppers.
  • 1 piece Red onion, thinly sliced Green onions can replace for a milder flavor.
  • 1 cup Feta cheese, crumbled Vegan feta can be used for dairy-free.
  • 1/4 cup Fresh parsley, chopped Fresh dill can also be a substitute.
For the Tzatziki Sauce
  • 1 cup Tzatziki sauce Homemade or store-bought.

Method
 

Step‑by‑Step Instructions
  1. In a medium bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and black pepper. Add chicken, coat well, cover, and marinate for at least 30 minutes.
  2. Heat a skillet over medium-high heat, add marinated chicken, and cook for about 6-7 minutes on each side until golden brown.
  3. Prepare quinoa or rice according to package instructions while chicken cooks.
  4. Chop vegetables: dice cucumber, halve cherry tomatoes, and slice red onion. Set aside.
  5. Once chicken has rested, slice into strips.
  6. Assemble bowls with quinoa or rice as the base, add sliced chicken, vegetables, feta, parsley, and drizzle tzatziki sauce.
