- Preheat your oven to 400°F (200°C). Cut off the top of a whole head of garlic, drizzle it with olive oil, and wrap it tightly in aluminum foil. Place the wrapped garlic on a baking sheet and roast for 30-35 minutes until golden and caramelized.
- While the garlic roasts, heat a tablespoon of olive oil in a skillet over medium heat. Add fresh spinach and sauté for 2-3 minutes until wilted. Season with salt and pepper.
- Once the garlic has cooled slightly, squeeze the roasted cloves into a bowl and mash them with a fork. Incorporate ricotta cheese, half of the mozzarella, oregano, and a little salt and pepper. Stir until creamy.
- Spread the garlic-ricotta mixture evenly on the pizza crust. Layer the sautéed spinach over it, followed by the remaining mozzarella and crumbled feta. Top with crushed red pepper flakes if desired.
- Bake the assembled pizza in your preheated oven for 15-20 minutes. Watch as the crust turns golden-brown and the cheese bubbles.
- Remove the pizza from the oven and let it cool for 5 minutes. Garnish with fresh basil if desired, then slice and serve.
