Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Cut off the top of a whole head of garlic, drizzle it with olive oil, and wrap it tightly in aluminum foil. Place the wrapped garlic on a baking sheet and roast for 30-35 minutes until golden and caramelized.
  2. While the garlic roasts, heat a tablespoon of olive oil in a skillet over medium heat. Add fresh spinach and sauté for 2-3 minutes until wilted. Season with salt and pepper.
  3. Once the garlic has cooled slightly, squeeze the roasted cloves into a bowl and mash them with a fork. Incorporate ricotta cheese, half of the mozzarella, oregano, and a little salt and pepper. Stir until creamy.
  4. Spread the garlic-ricotta mixture evenly on the pizza crust. Layer the sautéed spinach over it, followed by the remaining mozzarella and crumbled feta. Top with crushed red pepper flakes if desired.
  5. Bake the assembled pizza in your preheated oven for 15-20 minutes. Watch as the crust turns golden-brown and the cheese bubbles.
  6. Remove the pizza from the oven and let it cool for 5 minutes. Garnish with fresh basil if desired, then slice and serve.
