- Start by cutting boneless, skinless chicken thighs into 1-inch pieces and placing them into a large mixing bowl.
- In a separate bowl, whisk together soy sauce, honey, vegetable oil, rice vinegar, minced garlic, ground ginger, black pepper, and optional red pepper flakes.
- Pour the honey soy marinade over the chicken pieces, tossing everything together until well-coated. Cover and marinate in the refrigerator for at least 1 hour.
