  • 1 pound ground turkey can substitute with ground chicken or lean ground beef
  • 2 medium zucchini can swap with bell peppers or carrots
  • 1 medium onion can be omitted or replaced with shallots
  • 3 cloves garlic fresh is best, garlic powder can be used
  • 1 medium bell pepper any color or can be omitted
Seasonings
  • 1 teaspoon dried oregano can substitute with Italian seasoning
  • 1 teaspoon paprika smoked paprika can be used
  • salt to taste
  • black pepper to taste
Cooking Essentials
  • 2 tablespoons olive oil can use avocado oil or any cooking oil
  • 1 cup chicken broth vegetable broth is a good alternative
Optional Additions
  • 1 cup shredded mozzarella cheese can omit or use dairy-free cheese
  • fresh parsley for garnish, can swap with basil or cilantro

Method
 

Cooking Instructions
  1. Heat the olive oil in a large skillet over medium heat until shimmering, about 2 minutes.
  2. Add the chopped onion and diced bell pepper, sauté for 3-4 minutes until softened.
  3. Add minced garlic and cook for an additional minute until fragrant.
  4. Increase heat to medium-high and add ground turkey, cooking for 5-7 minutes until golden brown.
  5. Stir in diced zucchinis, dried oregano, paprika, salt, and black pepper; cook for another 5-6 minutes.
  6. Pour in chicken broth and let simmer for 2-3 minutes, mixing well.
  7. If desired, sprinkle shredded mozzarella cheese on top and cover to melt for 2-3 minutes.
  8. Garnish with freshly chopped parsley and serve warm.
