- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
- In a large skillet, warm olive oil over medium heat then add chopped onion and minced garlic. Sauté for about 2 minutes until fragrant.
- Add ground turkey to the skillet, cooking and breaking it apart for about 5 to 6 minutes until browned.
- Stir in diced tomatoes, dried Italian herbs, salt, and black pepper. Simmer on low heat for 3 to 4 minutes.
- Layer half of the sliced zucchini in the greased baking dish, followed by half of the turkey mixture and half of the mozzarella cheese. Repeat layering.
- Bake uncovered in the preheated oven for 30 to 35 minutes until cheese is bubbly and golden.
- Remove from oven and let cool for about 5 minutes before serving.
