Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Wash baby potatoes and cut them into halves or quarters for even cooking.
  3. Combine the baby potatoes, cherry tomatoes, minced garlic, olive oil, oregano, black pepper, and salt in a baking dish.
  4. Create a well in the mixture and place the block of feta cheese in the center, drizzling olive oil over it.
  5. Bake for 35-40 minutes, stirring halfway through, until potatoes are fork-tender and feta is melted.
  6. Stir the melted feta into the potatoes and tomatoes and serve warm, garnished with fresh basil or parsley.
