Ingredients
  

For the Chicken
  • 4 pieces Chicken Thighs Substitute with chicken breasts, reduce cooking time.
For the Vegetables
  • 1 medium Onion Yellow or white onion for best results.
  • 2 cloves Garlic Fresh garlic is preferred.
  • 1 tablespoon Ginger Grated fresh ginger is best.
  • 2 medium Carrots Substitute with parsnips or any root vegetable.
  • 1 medium Courgette (Zucchini) Can be omitted or replaced with bell peppers.
For the Sauce
  • 1 cup Orange (juice and zest) Lemon can be substituted.
  • 2 tablespoons Honey Can be replaced with agave syrup or maple syrup.
  • 2 cups Chicken Stock Use gluten-free stock if necessary.
For the Spices
  • 1 tablespoon Paprika
  • 1 teaspoon Ground Coriander Adjust according to taste.
  • 1 teaspoon Ground Cumin Adjust spice levels per taste.
  • ½ teaspoon Chilli Powder Modify based on your spice preference.
  • 1 teaspoon Turmeric
  • 1 teaspoon Cinnamon A little goes a long way.
For Cooking
  • 1 spray Olive Oil Cooking Spray Can be substituted with regular olive oil.
For Garnishing
  • ¼ cup Fresh Coriander Parsley can be used as an alternative.

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 180°C (160°C fan), 350°F, or gas mark 4.
  2. In a large, spray-oiled, oven-proof casserole dish, heat over medium-high heat. Add the chicken thighs, onion, garlic, and ginger, and sauté for 5-7 minutes.
  3. Sprinkle in the paprika, ground coriander, ground cumin, chili powder, turmeric, and cinnamon. Toss to coat the chicken evenly.
  4. Stir in the chopped carrots, honey, orange juice, zest, and chicken stock. Mix thoroughly.
  5. Bake the uncovered casserole in the preheated oven for about 40 minutes. After this time, add the courgette if desired, and continue to bake for an additional 20 minutes.
  6. Remove from the oven, season with salt and pepper, and garnish with freshly chopped coriander before serving.
