- Preheat the oven to 180°C (160°C fan), 350°F, or gas mark 4.
- In a large, spray-oiled, oven-proof casserole dish, heat over medium-high heat. Add the chicken thighs, onion, garlic, and ginger, and sauté for 5-7 minutes.
- Sprinkle in the paprika, ground coriander, ground cumin, chili powder, turmeric, and cinnamon. Toss to coat the chicken evenly.
- Stir in the chopped carrots, honey, orange juice, zest, and chicken stock. Mix thoroughly.
- Bake the uncovered casserole in the preheated oven for about 40 minutes. After this time, add the courgette if desired, and continue to bake for an additional 20 minutes.
- Remove from the oven, season with salt and pepper, and garnish with freshly chopped coriander before serving.
