- Preheat your oven to 350°F (177°C). Grease an 8½ x 4½ inch loaf pan with butter or oil and line it with parchment paper.
- Melt half the unsalted butter in a medium saucepan over medium heat. Stir continuously until melted, about 5 minutes.
- In a large mixing bowl, whisk together all-purpose flour, cocoa powder, baking powder, and optional salt.
- In a separate bowl, whisk room-temperature eggs and sugar until smooth. Stir in melted butter, milk, and vanilla until combined.
- Gently combine the wet and dry ingredients, being careful not to over-mix. Gradually stir in hot water.
- Pour the batter into the prepared loaf pan and spread evenly. Bake for approximately 39 minutes.
- Once baked, allow the cake to cool in the pan for about 20 minutes before transferring it to a wire rack to cool completely for 35-40 minutes.
