For the Cupcake Batter
  • 1 cup Oat Flour or gluten-free all-purpose flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 1/4 teaspoon Allspice
  • 1/8 teaspoon Cloves
  • 1/2 cup Butter (melted) or coconut oil
  • 3/4 cup Brown Sugar or coconut sugar
  • 1/2 cup Applesauce sweetened or unsweetened
  • 1/2 cup Apple Cider your favorite variety
  • 1 teaspoon Vanilla Extract
  • 2 large Eggs or flax eggs for vegan
For the Spiced Buttercream Frosting
  • 1/2 cup Butter (softened)
  • 2 cups Powdered Sugar to taste
  • 1 tablespoon Water/Milk/Apple Cider to adjust consistency
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg

Method
 

Cupcake Instructions
  1. In a small bowl, combine oat flour, baking powder, salt, cinnamon, nutmeg, allspice, and cloves. Whisk until well-blended.
  2. In a large mixing bowl, blend melted butter with brown sugar until creamy, about 2-3 minutes.
  3. Stir in applesauce, apple cider, and vanilla extract. Mix until combined, then add eggs and beat until creamy.
  4. Gradually add dry ingredients to the wet mixture. Gently fold together until just combined.
  5. Preheat oven to 350°F (175°C). Line a cupcake pan and fill liners 3/4 full with batter. Bake for 18-22 minutes.
  6. Allow cupcakes to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Frosting Instructions
  1. Beat together softened butter, powdered sugar, and a splash of apple cider, cinnamon, and nutmeg until fluffy and smooth.
  2. Frost cooled cupcakes and enjoy.
