Ingredients

For the Bites
  • nonstick cooking spray Nonstick cooking spray Prevents sticking; optional, but highly recommended for easy removal.
  • 2 cups All-purpose flour Provides the necessary structure; gluten-free flour can work as a substitute.
  • 2 teaspoons Baking powder This leavening agent helps your bites rise; ensure it’s fresh for the best outcome.
  • 1/2 teaspoon Kosher salt Enhances the flavor; regular salt can be used in equal amounts.
  • 1 teaspoon Ground cinnamon Adds a warming spice; feel free to substitute with nutmeg for a unique twist.
  • 1/4 cup Unsalted butter (melted) Brings richness and moisture; coconut oil can be a great dairy-free alternative.
  • 1/2 cup Granulated sugar Sweetens your batter; for a richer flavor, consider using brown sugar.
  • 1 large Egg Binds everything together and adds moisture; a flax egg works for a vegan option.
  • 1 teaspoon Vanilla extract Enhances the overall sweetness; almond extract offers a delightful variation.
  • 1/2 cup Unsweetened applesauce Adds moisture and subtle sweetness; a mash of bananas can substitute for added flavor.
  • 1 cup Finely diced Honeycrisp or Gala apples For that fresh apple flavor and texture; use other apple varieties if you prefer.
For the Glaze
  • 1 cup Powdered sugar Essential for creating the apple cider glaze; granulated sugar can be used in a pinch, but won’t yield the same texture.
  • 1/4 cup Apple cider or juice A flavored liquid for the glaze; any unsweetened variety will deliver the best flavor.

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a baking sheet with nonstick cooking spray.
  2. In a medium-sized bowl, whisk together 2 cups of all-purpose flour, 2 teaspoons of baking powder, 1/2 teaspoon of kosher salt, and 1 teaspoon of ground cinnamon.
  3. In a large mixing bowl, combine 1/4 cup of melted unsalted butter and 1/2 cup of granulated sugar. Add 1 large egg, 1 teaspoon of vanilla extract, and 1/2 cup of unsweetened applesauce, whisking until smooth and creamy.
  4. Gently add the dry ingredients into the wet mixture, stirring until just combined, then fold in 1 cup of finely diced apples.
  5. Using a tablespoon, scoop portions of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for about 10 minutes, then switch to the broiler on high for an additional 2-4 minutes until the tops are golden brown.
  7. While baking, whisk together 1 cup of powdered sugar and 1/4 cup of apple cider until smooth.
  8. Once the bites are out of the oven, brush a generous amount of glaze over them and let it soak in.
  9. Allow the glazed bites to sit for about 15 minutes to let the glaze set before serving.
