Muffin Batter
  • 1/2 cup Unsalted Butter softened
  • 1 cup Granulated Sugar can substitute with brown sugar
  • 2 large Eggs room temperature
  • 1 teaspoon Almond Extract or vanilla extract
  • 2 cups King Arthur Unbleached All-Purpose Flour or gluten-free flour
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Table Salt
  • 1/2 cup Milk whole or almond milk
Muffin Mix-Ins
  • 1/2 cup Slivered Almonds toasted for flavor
  • 1 cup Cherries pitted and chopped
Topping
  • 1 tablespoon Granulated Sugar for topping

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and prepare a muffin pan.
  2. Cream together the unsalted butter and granulated sugar until light and fluffy.
  3. Incorporate the eggs one at a time and then mix in the almond extract.
  4. Sift together the flour, baking powder, and salt. Gradually mix this with the creamed mixture, alternating with milk.
  5. Carefully fold in the cherries and slivered almonds.
  6. Fill the muffin cups about 2/3 full and sprinkle granulated sugar on top.
  7. Bake the muffins for 25 to 30 minutes until golden brown.
  8. Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack.
