- Melt 3 tablespoons of butter in a saucepan over medium-low heat. Add ⅛ teaspoon of red pepper flakes and let them cook together for about 5 minutes.
- Transfer the melted butter to a bowl, spreading it generously on one side of each slice of bread.
- Place one slice of bread, butter-side down, into the heated saucepan. Add 2 ounces of crumbled goat cheese and 2 ounces of shredded white cheddar on top, then drizzle 1 tablespoon of honey.
- Cover with the second slice of bread, buttered side facing out, and reduce heat.
- Cook for 5 to 7 minutes until the bottom is golden brown and cheese starts to melt.
- Carefully flip the sandwich and cook until the other side is golden-brown and cheese is completely melted.
- Remove the sandwich from the pan, drizzle with the remaining honey, and sprinkle additional red pepper flakes if desired.
- Slice the grilled cheese diagonally and serve immediately.
