  • 2 oz Goat cheese, crumbled Can replace with cream cheese
  • 2 oz White cheddar, shredded Mozzarella is an alternative
  • 2 tbsp Liquid honey Can use agave syrup as a vegan option
  • 3 tbsp Butter, melted May replace with mayonnaise for crispier texture
  • tsp Red pepper flakes Adjust based on preference or omit

Method
 

Step-by-Step Instructions
  1. Melt 3 tablespoons of butter in a saucepan over medium-low heat. Add ⅛ teaspoon of red pepper flakes and let them cook together for about 5 minutes.
  2. Transfer the melted butter to a bowl, spreading it generously on one side of each slice of bread.
  3. Place one slice of bread, butter-side down, into the heated saucepan. Add 2 ounces of crumbled goat cheese and 2 ounces of shredded white cheddar on top, then drizzle 1 tablespoon of honey.
  4. Cover with the second slice of bread, buttered side facing out, and reduce heat.
  5. Cook for 5 to 7 minutes until the bottom is golden brown and cheese starts to melt.
  6. Carefully flip the sandwich and cook until the other side is golden-brown and cheese is completely melted.
  7. Remove the sandwich from the pan, drizzle with the remaining honey, and sprinkle additional red pepper flakes if desired.
  8. Slice the grilled cheese diagonally and serve immediately.
