Ingredients
  

For the Marinade
  • 1/2 cup Soy Sauce Substitute low-sodium for a healthier option.
  • 1/4 cup Water
  • 1/4 cup Red Wine/Mirin Replace with rice vinegar mixed with sugar for a non-alcoholic option.
  • 2 tablespoons Brown Sugar Granulated sugar can be used.
  • 1 tablespoon Vinegar Rice vinegar is ideal.
  • 3 cloves Minced Garlic Fresh is recommended.
  • 1 tablespoon Ginger Fresh is best for optimal flavor.
  • 1/2 teaspoon Ground Pepper Can be adjusted to taste.
  • 1 tablespoon Cornstarch Optional for a thinner sauce.
For the Chicken Skewers
  • 1 pound Chicken Substitute with firm tofu, bell peppers, or mushrooms.

Method
 

Preparation
  1. Soak the wooden skewers in water for 10–20 minutes.
  2. Combine soy sauce, water, red wine or mirin, brown sugar, and vinegar in a mixing bowl. Stir until the brown sugar dissolves.
  3. In a large bowl, coat chicken pieces with minced garlic, ginger, ground pepper, and reserved marinade. Let marinate for at least 10 minutes.
  4. Bring remaining marinade to a boil, thicken with cornstarch slurry, and cook until glossy.
  5. Thread chicken onto soaked skewers, leaving space between pieces, then preheat grill or broiler.
  6. Grill skewers for 8–12 minutes, turning occasionally and basting with thickened sauce.
  7. Remove and rest the skewers before serving, garnished with sesame seeds or green onions if desired.
