- Begin by slicing each medjool date in half and removing the pits if necessary. Cut into smaller pieces, roughly the size of a cherry.
- In the mixing bowl with the chopped dates, add a generous amount of roughly chopped roasted pistachios, along with a sprinkle of cinnamon if desired. Combine using your hands.
- Grab a microwave-safe bowl and add dark chocolate chips and coconut oil. Heat in the microwave, melting in 30-second increments, stirring in between each interval until smooth.
- Pour the melted chocolate over the date and pistachio mixture. Stir gently until everything is evenly coated. Scoop out and drop onto a parchment-lined tray, forming clusters.
- Place the tray in the freezer for about 15 minutes to allow the clusters to set. Once they feel firm, they are ready.
- After the clusters have set, optionally sprinkle a tiny pinch of flaky salt over each cluster. They're now ready to be enjoyed!
