Method
 

Step-By-Step Instructions
  1. Begin by slicing each medjool date in half and removing the pits if necessary. Cut into smaller pieces, roughly the size of a cherry.
  2. In the mixing bowl with the chopped dates, add a generous amount of roughly chopped roasted pistachios, along with a sprinkle of cinnamon if desired. Combine using your hands.
  3. Grab a microwave-safe bowl and add dark chocolate chips and coconut oil. Heat in the microwave, melting in 30-second increments, stirring in between each interval until smooth.
  4. Pour the melted chocolate over the date and pistachio mixture. Stir gently until everything is evenly coated. Scoop out and drop onto a parchment-lined tray, forming clusters.
  5. Place the tray in the freezer for about 15 minutes to allow the clusters to set. Once they feel firm, they are ready.
  6. After the clusters have set, optionally sprinkle a tiny pinch of flaky salt over each cluster. They're now ready to be enjoyed!
