Preparation Steps
  1. Begin by lining an 8x8 inch baking pan with parchment paper, ensuring it hangs over the edges for easy removal later.
  2. In a medium saucepan, combine sweetened condensed milk, caster sugar, dark brown sugar, liquid glucose (or corn syrup), golden syrup, and unsalted butter over low heat. Stir continuously for about 5-7 minutes until all ingredients are melted and well combined.
  3. Gently increase the heat to medium, stirring constantly to prevent sticking. Simmer for approximately 6-8 minutes until thickened and pulling away from the sides.
  4. Remove from heat and stir in the chopped white chocolate and most of the sea salt, continuing to stir until the mixture is smooth and glossy.
  5. Pour the warm fudge mixture into the prepared baking pan, using a spatula to smooth the top. Sprinkle the remaining sea salt over the top.
  6. Let the fudge cool at room temperature for about 30 minutes, then cover with plastic wrap and refrigerate overnight.
  7. Once set, lift the fudge out of the pan using parchment paper and cut into bite-sized squares.
