Step‑by‑Step Instructions
  1. Gather all your ingredients and allow them to come to room temperature for about 30 minutes.
  2. Combine the softened cream cheese or coconut butter, butter, sweetness, and instant coffee in a mixing bowl. Blend until smooth and creamy for 2-3 minutes.
  3. Chill the blended mixture in the refrigerator or freezer for about 15 minutes to firm it up.
  4. Use a cookie scoop or your hands to form small balls of the mixture, place them on a parchment-lined plate, then return to the freezer for another 15 minutes.
  5. Melt chocolate chips in a double boiler over low heat until smooth and glossy.
  6. Dip each truffle into the melted chocolate and return them to parchment paper to set for about 20 minutes in the refrigerator.
  7. Transfer finished truffles to an airtight container for storage, layering with parchment paper to prevent sticking.
