Method
 

Prep and Cooking
  1. Begin by cleaning the lobster, removing the shell, and cutting it into small pieces; set aside.
  2. Heat a large wok over medium-high heat with a splash of oil, then add minced ginger, garlic, shallots, and chopped chilies. Stir-fry for about 2-3 minutes.
  3. Add the lobster pieces to the wok and stir gently for about 4-5 minutes until they turn opaque.
  4. Pour in the tomato sauce, soy sauce, and water into the wok. Stir and let it simmer for 5-7 minutes.
  5. Beat the fresh eggs in a bowl until smooth and drizzle into the simmering sauce while stirring gently for 2-3 minutes.
  6. Transfer the lobster and sauce to a serving platter, garnish as desired, and serve hot.
