- Preheat your oven to 400°F (200°C) and thaw 1 sheet of puff pastry.
- In a bowl, mix chopped spinach, drained artichokes, Parmesan, cream cheese, mayonnaise, and minced garlic. Season with salt, pepper, and optional red pepper flakes.
- Roll out the puff pastry to 1/8 inch thick and cut into two rectangles. Spread half of the filling on one rectangle.
- Cover the filling with the other half of the pastry and seal the edges. Slice into six strips.
- Twist each strip and shape into a swirl, tucking the ends underneath.
- Beat the egg with water for an egg wash and brush it on each swirl.
- Bake for about 25 minutes, or until golden brown.
- Let cool slightly before serving.
