  3. Whisk together egg white, vanilla extract, and water until frothy—about 1-2 minutes.
  4. Add pecans (or almonds) into the bowl with the frothy egg mixture and stir to coat.
  5. Transfer coated nuts into the ziplock bag and shake until evenly coated with sugar mixture.
  6. Spread the nuts in a single layer on the baking sheet for even roasting.
  7. Bake for 1 hour, stirring every 15 minutes to ensure even cooking.
  8. Remove from oven and cool completely on the baking sheet before serving.
