Method
 

Baking Instructions
  1. Preheat the oven to 425°F (220°C) and line a muffin pan with six liners, filling every other cup.
  2. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until fully combined.
  3. In a separate bowl, combine the large eggs, buttermilk, vegetable oil, vanilla extract, and creamy peanut butter. Whisk until smooth.
  4. Gently fold the dry ingredients into the wet mixture until just combined.
  5. Cover the bowl with a towel and let the batter rest for 15 minutes.
  6. Fill each muffin liner with 6-8 heaping tablespoons of the batter and sprinkle extra chocolate chips on top if desired.
  7. Bake for 7 minutes at 425°F, then reduce heat to 350°F and continue baking for 16-19 minutes.
  8. Let the muffins cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
