Baking Instructions
- Preheat the oven to 425°F (220°C) and line a muffin pan with six liners, filling every other cup.
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until fully combined.
- In a separate bowl, combine the large eggs, buttermilk, vegetable oil, vanilla extract, and creamy peanut butter. Whisk until smooth.
- Gently fold the dry ingredients into the wet mixture until just combined.
- Cover the bowl with a towel and let the batter rest for 15 minutes.
- Fill each muffin liner with 6-8 heaping tablespoons of the batter and sprinkle extra chocolate chips on top if desired.
- Bake for 7 minutes at 425°F, then reduce heat to 350°F and continue baking for 16-19 minutes.
- Let the muffins cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
